Gluten-Free Ginger Bread
1¼ Cups White Rice Flour
½ Cup Glutinous Rice Flour
¼ Cup Tapioca Flour
⅓ Cup Buckwheat Flour
2 Teaspoons Baking Powder
1 Teaspoon Baking Soda
¼ Teaspoon Salt
1 Tablespoon Vanilla
1½ Teaspoons Ground Ginger
¼ Teaspoon Ground Nutmeg
¼ Teaspoon Ground Allspice
1 Tablespoon Cinnamon
1 Dash Ground Cloves
¼ Cup Grated Apples (packed; and without any Juices)
½ Cup Milk
⅓ Cup Mascarpone Cheese
¼ Cup Almond Meal
⅓ Cup Molasses
¼ Cup Canola Oil
2 Eggs
1 Cup Brown Sugar
½ Cup Chopped Walnuts
⅓ Cup Raisins (Optional)
One standard sized (9x5") loaf of bread.
  1. Mix all ingredients in electric mixer at medium-high speed for 3-5 minutes, or until ingredients are well distributed.
  2. Pour batter into a greased standard bread loaf pan (9x5").
  3. (Optional; as pictured) For a garnish, sprinkle ¼ cup of chopped walnuts on the top of the batter before baking.
  4. Bake for 60 minutes at 350°F. Toothpick-test in last 5 minutes to confirm doneness.
