Gluten-Free Citrus Rice Pudding
¾ Cup Jasmine Rice (uncooked)
½ Cup Milk
14 Ounce (1 can) Light Coconut Milk (nearly 2 Cups)
1 Cup Heavy Cream
½ Cup Sugar
1 Tablespoon Honey
2 Teaspoons Vanilla
1 Orange (for Zest)
Serves six to eight.
Baker’s Tip
Best served same day as made. Before serving, decorate top of pudding with shaved orange peel (as pictured).
  1. In sauce pan, combine all ingredients and bring to a boil, stirring occasionally.
  2. Reduce heat to low and cover.
  3. Simmer for 20 minutes or until pudding has a creamy consistency, stirring occasionally.
  4. Leave uncovered and cool to room temperature.
  5. Place in refrigerator to cool completely before serving.
